Salads are in trend these days. You here all sorts of salads being eaten by health-conscious people and celebrities in fancy restaurants, which makes you wonder can you also eat those salads without spending too much!. Salads can be easy and healthy family dinner or even lunches. Being so diversified in varieties, it can be served as a side dish or even as the main course. You can use all the available seasonal vegetables a few seasoning sauces and make the best use of these by converting it into some form of salad and savor it without having to worry about calories. I personally love my salad with some sort of protein in the form of grilled chicken or baked fish.
Well, We make may all have this misconception that we cant recreate or make such salads at the comfort of our home, without compromising on the taste and presentation. But, my friend let me tell you that its as easy as making any of your favorite dishes without investing too much time, as it’s quick and healthy at the same time. I like to make such hearty salads once or twice a week, both I and my husband loves to savor it. Salads are complete in itself as it has protein, fiber, minerals and all the micronutrients essential for a body to function.
Here I am making Mixed Vegetable salad with boiled eggs and strawberry along with beetroot soup. This gives you a feeling of fullness, with all the goodness of raw vegetables and soup. You can go ahead and incorporate any more vegetables in this recipe according to your preference. I have chosen lettuce, bell peppers, olives, carrots, onion, and eggs. For making it completely vegetarian you can replace the eggs with cottage cheese/ tofu/ mushroom. Everything I have used here is easily available in your local or supermarket.
Let’s see the recipe
Ingredients: (2 Servings)
Hard-Boiled Eggs- 2
Lettuce- 7 -10 leaves- coarsely chopped
Onion- thinly sliced
Red bell peppers- coarsely chopped
Yellow bell peppers- coarsely chopped
Olives- 2- 3 tbsp
Carrots- 2 (peeled and cut into small pieces)
Strawberry ( or Any seasonal fruit )
Caesar salad dressing- 1 tbsp
Mustard sauce- 1 tbsp
Mayonnaise – 1 tbsp
Salt- ap per taste
Pepper- as per taste
Lemon juice- 1 Tsp
For the salad:-
First of all, in a bowl mix the 3 dressings as per the measurement, also add lemon juice, salt, and pepper, mix well and keep aside.
Now Wash and Dry all the vegetables.
Chop the vegetables as desired. Mix all the chopped vegetables in a large bowl.
Cut the hard-boiled eggs into 4 pieces, sprinkle with salt and pepper and keep it in a plate.
On another plate, add the chopped vegetables and pour the dressing when you are just about to eat. (adding beforehand will make your veggies soggy).
We are ready with the salad. Its a really fulfilling salad, I can tell by experience. Do try it.
For Beetroot soup –
Wash, peel and cut pieces of beetroot.
Put it into the cooker with about 3 glasses of water, salt and ground pepper.
Cook it for about 3-4 whistles, strain the soup and have it lukewarm. (This soup is full of micronutrients, also helps in increasing the hemoglobin level )
In a plate mix all the veggies and add seasoning mixture and mix thoroughly. Cut open eggs in 4 parts and sprinkle salt and pepper on it. Add chopped carrots and strawberry on the side, along with beetroot soup. It’s time to savor it now.
